Lemon Poppy Seed Cake

1 box yellow cake mix

1 (3.4 oz) box instant lemon pudding

4 eggs

1 c. water

3/4 c. oil

2-4 T. poppy seeds

Mix all for 3 minutes.  Pour into a greased bundt pan, angel food pan or 2 loaf pans.  Bake at 350 for 40-45 min.

Optional toppings:  when cool, poke the cake with a wire tester all over.  Brush with syrup made from 1/3 cup sugar and 1/3 cup lemon juice or make a glaze with powdered sugar and lemon juice to desired consistency, or dust with powdered sugar
